Simple, Quick Ninja Mother's Day Breakfast in Bed

Because you really do have to be a Ninja to prepare breakfast in bed to surprise your dear mother or guardian on her special day.

This is a simple and sweet mother's day surprise as you surprise yourself with this last minute present because you almost forgot about tomorrow! But whatever the reason,we are sure she would appreciate you taking time out of your day (in the wee morning, no less!) to make her breakfast to start her special day off - something she probably did for you every morning since your diaper days.

We love the idea of cooking or baking as gifts because of the time and effort one must put into it to do it. It can be a daunting task for some people, but the effort is always sincere and very much appreciated (the clean-up bill is another story).

Anyway, these are some of our breakfast go-to's when we need ideas for a simple fool-proof meal using things you probably already have at home, done in about 30 minutes of less, and relatively quiet to prepare for your light-sleeping guardian (ps fresh flowers are a plus).

We were in a hurry so we used this clothes pin to hold little messages everywhere on the tray! For this oatmeal, we added raw honey, poppy seeds, cinnamon, 1/4 banana, strawberries and a pinch of blueberries

For your health-conscious loves out there, oatmeal is a good-hearty go-to for us. And this could be prepared in about 15-20 minutes.

Ingredients:

  • 1/2 cup Old-fashion Oats of any kind
  • 1 tbsp of brown sugar
  • 1 tsp of butter (optional if you want richer oatmeal)
  • Toppings:
    • Fruit (berries, banana, kiwi, apples, dried cranberries etc )
    • Nuts/seeds (almonds, pecans, pumpkin seeds, poppy seeds, chia seeds...)
    • Drizzle of Honey, chocolate, etc ( you know your mom best!)
  1. Add milk of water to a small sauce pan with your dried oats, and stir slowly at medium heat until oats start to thicken(Add fruit (like banana or apple) cinnamon, orhoney if that's what you want a more prominent flavor of those while stirring).
  2.  Once, your oats start to bubble, remove from heat, and add your brown sugar.
  3. Add toppings:) DONE.

You can step it up a bit with some good ol' pancakes too. Yes, you can do this in 30 minutes with the magical help of a box mix!

This one is self-explanatory since instructions are on the box - hopefully this just gets some gears running! And a word about bacon (if you are going to cook bacon)...it can get quite loud with all it's sizzling goodness...so just pop it on a baking tray with some foil and bake it at 450 degrees for 10-15 mins for quick cooking! It's quiet and you'll still get a whiff of bacon in the air....but just for yourself. If you have some berries around, you can go ahead and make an easy compote by simmering fruit down with some squeezed orange juice, orange zest, tea and sugar in a small sauce pan, and let it settle to thicken.

There are so many ideas - how about a strawberry nutella panini sprinkled with sea salt flakes if you have a panini machine around? Open-faced advocado sandwich with an egg sunny-side up? Scones? Wish we could have made these for you...but we didn't have those laying around our kitchen this morning! But you might!

Or simply, use mom's secret recipe for herself. Hey, shows you learned something.

Here, we simply made banana bread muffins with a fruit cup and coffee. Traditionally, had this with mom with a cup of tea or made during the holidays for friends and family, but thought we would share this one with you all from our home to yours. Mother-approved!

For 1 loaf or 10-dozen muffins(depending!

Ingredients:

  • 2-3 ripe bananas
  • 4.5 tbsp of butter
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1.5 cup of flour
  • 1/2 cup of walnuts or pecans (optional)
  • 1 egg
  • 1 cup of sugar

Pre-heat oven to 350 F. Easiest way to make it is to mash the bananas with a potato masher or fork, mix in melted butter and the rest of the wet ingredients together. Then mix in with the dry ingredients, and bake for 1 hour if using a standard loaf, half time for muffins(till brown on the top!) and 15 minutes for mini-muffins (always check with a toothpick!). The house will smell glorious.

Good luck!

HAPPY MOTHER'S DAY!!! <3
